OCR: HOPS You can make beer without hops, but it isn't very interesting. The sweetness of malt needs the bitterness of hops to round out the beer flavor. Hops are little cone-shaped flowers, and each variety has its own special character. We keep trying to describe them in words, but, like flowers or fruits, they really have to be smelled and tasted to be recognized. Hops are pelletized by a purely mechanical procedure. Nothing is added in the process. Hop pellets are stronger than the same weight of hop cones, and they keep much better. The strength is because they disperse better in the boil, being essentially a powder. The keeping qualities are better because the pelletizing glazes and seals the surface, and because from then on, they are sealed up in barrier material. They are almost always the freshest hops you can buy, but last year, for the first time, whole hop plugs came on the market, foil-packed in England. We can now offer you truly fresh whole hops, English and European, in packs of 5 ounces (10 x 1/2 oz plugs). Hops are used in three different ways. The Hops boiled with the wort (bittering/ boiling/kettle hops) slowly release acids which bitter the beer and help preserve it. Hops added later in the boil (flavoring/ spicing hops) add the varietal spice of that particular hop to the flavor. Hops added at the very end of the boil (finishing/aromatic hops) or even later during fermentation (dry hopping) add aroma. . Hop Oil adds aroma only. Any hop can be used for either purpose, but there are traditional uses, and new varieties are being developed which are hard to classify. The most important thing about hops is that they be kept fresh, full of bittering alpha acids, spicy varietal character and aromatic hop oils. Thats why barrier packaging is so important. Poly bags just won't protect the hops adequately. HOP OIL Refined by distillation, only the sweetest fraction saved, is it a flavoring, or a perfume ?
